Rice with grilled salmon and gobo

It’s been a while since I posted my last article.
Wishing you all a wonderful and prosperous new year!
I bought very nice salmon in the new year and made stome traditional Japanese new year dishes. I couldn’t use all the salmon so grilled the rest to make one more rice dish.
It turned out to be very nice so I would like to introduce how to make it!

Ingredients (for 4-5 people):
Nicely cooked rice > 600-700g
Grilled salmon (take out bones and skin, then flake the flesh) > 110g
Burdock > 100g
Dark soya sauce > 4 table spoons
Miso paste > 3 table spoons
White sugar > 1/2 table spoons
Sesame oil > moderate amount
Roasted sesame > moderate amount

  1. Peel the skin of burdock and cut into long thin shavings. Put the shavings into water for 10 minutes and move them onto a seive.
  2. Heat the sesame oil in a pan and fry the burdock. Once the burdock becomes soft, add the salmon flakes and mix them roughly. Add soya sauce, miso and white sugar and stir until all the liquid disappears.
  3. Add the burdock and salmon mixture into the warm rice. Serve the rice in a rice bowl and sprinkle roasted sesame on the rice.

It is highly recommended that you grill salmon on special mesh for fish or a fish grill for the best result. If you like a little spicy, you could add dried chilli when you fry the burdock and salmon.

Burdock is often used for Japanese dishes. It is rich in fiber and has fregrance like ginseng. In these days, burdock is sold in a local supermarket in the name of either “Gobo” or “Burdock”. Why don’t you try this healthy and unique vegetable at home.

材料 4-5人分:
おいしく炊いたごはん 600-700g
グリルしたサーモン  骨と皮を取り除いてほぐしたもの 110g
ごぼう        100g
濃い口醤油      大匙4
味醂         大匙3
上白糖        大匙半
胡麻油        適量

  1. ごぼうの皮をむき、ささがきにし、水に10分ほどさらして、ざるにとる。
  2. フライパンに胡麻油をねっして、ごぼうをいためめ、しんなりしたら鮭のほぐし身をいれざっとかきまぜ、醤油、味醂、上白糖を加えて水分がなくなるまで炒め煮する。
  3. 温かいごはんとまぜる。茶碗によそい、いり胡麻をふる。
